Miles per US gallon

I'm getting around 16 miles per US gallon driving on a freeway at
approximately 70 miles per hour. (I conducted a somewhat controlled
test) Is this about normal?  Someone mentioned that with a thermostat
opening at 74 degrees compared to a regular Stag thermostat at around
80 something, the car consumes more gas/ petrol.  What's the reason
behind this?
