There is a web site and mailing list devoted to the general topic of
modifying fuel injection systems  http://efi332.eng.ohio-state.edu/diy_efi/
 The emphasis is on adapting General Motors throttle body injection systems
to other vehicles, including a few British car projects, although no
original engined Stags. Bosch and Lucas projects have also been mentioned
fairly often.
Hart Racing Services also sells a Holly carburator adapter for the Stag
intake manifold which could possibly be used with the Holly throttle body
fuel injection system, although I'm not aware that anyone has tried this?
On the other hand, there have also been several discussions about the
SU/Stromberg carburators and why they seem to have a driving feel that is
very similar to the EFI systems!
