For track use I currently have Toyo RA1 tires, size 235/45R17, on my '95 M3.
Track use involves some serious "gas pumping", and I've never had any
problems with tire rubbing. The tires are mounted on 17x8 IFG wheels, with
the correct offset for the M3. The car has stock M3 suspension.
Perhaps your wheels have too much offset, so the tires are pushed out too
much. What wheels are you using?
