I have changed the timing belt in my 1990 325i. Taking the hood off is not
necessary, but yes, it comes off pretty straightforward. If you line up the hood
in the original postion, it should be fine (check the marking made by the bolts
in the hinge bracket).
What is more important when doing the belt is to remove the radiator, this will
get you all the room you need.
