Steam works well. Costco has a steam cleaners that is rather inexpensive and gives a nice jet of hot steam. Just be sure to do it with the engine running. Steam does not pool like water does so its "safe" around electronics. Personally I would rather a dirty grimy engine compartment rather than risk damaging something electronic on my engine. Oh wait my main car is a Diesel Mercedes with Mechanical fuel injection I have nothing electronic in my entire car. :)

Seriously though I think some dealerships do use steam. You have to be careful with degreasers and water. I have had a couple of not so nice experiences with a nice clean engine that won't start for a day until it dries out and I have had degreaser flung onto fenders by fanblades causing me to have to rewax them. Not fun to say the least.
