Unfortunately, that's a bad guess. BMWNA only imported the E34 5-series
touring with automatic transmission.
I exchanged email with Brent Anderson about a swap from auto to manual
transmission, and it's pretty pricey. In addition to the transmission
replacement, you also need to replace the driveshaft and rear diff gears, as
well as add clutch hydraulics and different pedals. Also, I think some
re-programming is required (probably using MODIC).
Figure on paying $7k to get the swap done. The sad thing is, if you buy a
1992 E34 (for $8k) and spend $7k to swap the transmission, you're not too
far from the price of a 1997 E39 528iT, which WAS available with a manual
transmission.
Finding an E30 Touring in the US will be very difficult, since they were
imported by individuals, not BMWNA, so the quantity is very small.
If you want to spend lots of money, and get a modified E30 Touring, check

It's in Canada, so you may have real hassles getting it into the US, and
getting it certified. But, if you could, you would have one incredible car!

There were a reasonable number of 525i "Touring" models sent here
beginning sometime in the early 90s (E34 body), and I'd guess that
there were some in 5-speed trim.
