Ideally, you want the shoulder belts to be close to horizontal from your
shoulders to their mounting point.  Either of these setups could work, but
I'd be very careful about verifying that the mounts were strong enough.
For #1, yes, it's essential to use backing plates, because the sheet metal
bulkhead behind the rear seat is thin.  For #2 to work, the bar has to be
thick enough not to deform under load.  This kind of device could be hard
to build, because the pillars are narrow and there isn't much to mount to.  

A third option is to anchor the shoulder belts to the factory hard points
under the rear seat, then run them up and over a guide bar mounted as
described in #2 and finally to the driver's seat.  In this configuration,
the guide bar only locates the belts, rather than anchoring them, so it can
be fairly light weight.
