A thermocouple transmitter amplifies the milli-volt signal from a
thermocouple and turns it into a more usable standard range. It should also
have "cold junction compensation". This essentially adds a voltage to the
signal to reference the temperature to 0 degrees. Without it, the reading
would be low by an amount corresponding to the temperature of the
transmitter itself.
There are many kinds of thermocouples - type J, type K, etc. It is important
that the transmitter is set up for the type of thermocouple that you are
using.

Make sure that the thermocouple connects directly to the transmitter.
Extending the thermocouple leads with copper wire will result in errors in
the readings.
